Here we go, Potato Salad with no Potatoes, that’s right no potatoes. We have substituted the potato with cauliflower and I know you are going to be very surprised! Cauliflower is a great friend to low-carb eaters, as it can be substituted for starchier foods such as potatoes and rice.
No Potato, Potato Salad
Head of Steamed Cauliflower
4 radishes
½ cup chopped white onion
2 large stalk of celery
4 hardboiled eggs
1 cup dressing ( 1 cup of Hellmans Mayo, 2 Tbls White Vinegar, 5 tps Stevia mix together)
Salt and pepper
Steam 1 head of Cauliflower in a steamer for 10 minutes. Or use a pot with inch of water in the bottom, place cauliflower in a metal colander, place lid on and steam for 10 minutes.
Remove cauliflower from steamer, cut florets and stems into small pieces. Cut radishes, celery and onion into small pieces, add to cauliflower.
Hard-boil 4 eggs, peel, mash add 1 cup of mayo dressing, mix together.
Mix eggs, mayo dressing in the cauliflower mixture, cover and refrigerate.
